Lets say, I have a set of full D and like 10 barrets on one server in my E-Chest, If my MVP expires, and i repurchase it, Does reset my echest, Or just make it re-available to me?

If you repurchase MVP, everything would be still in your enderchest. Your enderchest won't get resetted.

The inventory of your enderchest will be saved, you just can't access it unless you buy MVP again.
