Okay so recently my FPS have been really terrible, I don't know what's causing it. I'm usually at 144fps capped at all times, but now as soon as I get into a fight (in-game) my FPS go down in spike to between the ranges of 30-140fps, which makes it unplayable.

I'm running on a default faithful 32x resource pack.
Also, this is not influenced by windows I have open in the background, still occurs if I don't.

    My current specs are:
    GPU: GeForce GTX 1060 6GB
    CPU: Intel(R) Core(TM) i5-7400 CPU @ 3.00GHz
    16 GB RAM

Does this only occur on Minecraft?

How much RAM have you allocated to Minecraft? It can be seen in the Minecraft Launcher options.

Minecraft does not need 5GB to be allocated because that is too much. In fact, you won't get any performance increase above 2GB of RAM allocation, so it's useless and just wasting your system memory. I recommend decreasing it from 5GB to 2GB and try playing to see if that has fixed it.

I don't think this is the case because at lower memory allocated I've ran out of memory. Also, this only occurred recently and I've had it at 5GB since like forever.

Regardless, allocating 5GB of RAM to Minecraft is useless. Try reducing it. You're not going to harm your system by reducing the memory and trying to see if the problem still persists.
