In order to prevent your team from losing, defense is necessary. Here are some tips and tricks to picking the best class for defense:

Examine your base. Find out where every foe can approach from, and where people can hide the best (so you're not sniped from 100 blocks away by an Archer). You wouldn't want to be backstabbed now, would you?

Picking the right defense. During certain matches, you may notice that only certain players come to steal the flag (i.e. 2 Ninjas constantly return to the base to steal the flag only). Pick the role that can counter them the best (i.e. example above would be decimated by an Engineer's Turret). It would not be wise to have an easy to beat defense for your offense (i.e. an Assassin would not do so well against the above listed offense)

Teamwork. Get someone to help you out defend the flag. The more, the merrier (Make sure at least 1 person goes Medic).

Now that we've reviewed the best techniques to defending, how about we look at the best combos for defense?

Medic + Any class. Just have a Medic. If you run out of steaks and you need to constantly defend, then you can just keep on mowing down the enemy.

Dwarf + Medic. Probably one of the most useful combinations out there, as the dwarf can obliterate anything. If he gets harmed, just have the Medic heal him. Best to get this started early on in the match for the most powerful sword (an average length game can get a dwarf to 15+ if he charges from the start).

Dwarf + Pyro. Have the dwarf hit someone with that devastating blade, and then have the pyro join in and destroy the burning body.

    Any Class + Chemist.
What's better than a defender? A buffed defender. Give your team the perks to hold an advantage over another person using the same kit. Just watch out for the archers, they deal insane damage... This is especially useful with Dwarf.

Medic + Medic. This combination is by far one of the least used, but it is one of the most effective. They can both heal each other in the middle of combat, and can restore each other's food.

Keep in mind that if you have a lot of people on defense, then they can add to the combo of pain. For example...

Dwarf + Medic + Chemist + Pyro. This setup is going to be a real pain in the butt for anybody trying to steal that flag... The extra speed and strength will make people die quicker, the dwarf and pyro can burn and kill people instantly, and the medic can heal any wounds along with dealing some extra damage.

Keep these in mind, and you'll make the enemy offense want to rage quit in no time.

The only thing the offense has to is send in an assassin to kill the defenders and then the flag is open.

Not really, most of the time the assassin can only take care of one or two people

They are mostly recovery classes, "short term recovery" incase anything got out with the flag, they would stop them instantly

I think I know very well how recovery works, thanks!
Nonetheless, having a ninja as roaming defense is common practise in matches and having an assassin be deadly before someone steals the flag is more effective as the soon-to-be flagholder is less likely to expect him and may also not have the chance to block as he has to get out of a flagroom.

Here, for example, a good version for defense could be pyro, assassin, ninja. An enemy trying to steal the flag aims to get out as quickly as possible because of the pyro but has to stop to block the assassin, meanwhile the ninja can deal good damage because of the very limited space in many flagrooms.
