Adam and Eve may have looked something like Antonio Banderas and Penelope Cruz. Their appearance is smack-dab in the middle of the skin/hair color charts. They may have also been caucasoids, which has a skull shape that's intermediate between mongoloid and negroid.
With all this being the intermediate, it gave way to a wide variety of outcomes. I hope this makes sense to you. Through centuries of breeding, genetic mutations, and environmental conditioning based on their locations, we ended up with many different appearances of humans.

You can think about it in terms of micro and macro evolution. Micro would be like, changes in height or skin/eye colour among humans. Macro is a big change like becoming another species.
The key thing to understand is that MACRO evolution is just MICRO evolution over a long time. If humanity undergoes hundreds of small mutations that don't change us much from year to year it won't seem like we're evolving but eventually we'll be a different species. Capiche?
